L\u00e4gg upp p\u00e5 en pl\u00e5t. Baka i ugn p\u00e5 ca 130 grader tills k\u00f6ttets innertemperatur \u00e4r 55 grader.<\/p>\n<p>Anv\u00e4nd samma panna som k\u00f6ttet just stekts i och stek timjan, vitl\u00f6k med en skv\u00e4tt r\u00f6dvin samt lite sm\u00f6r.<\/p>\n<p>Koka upp vatten och buljong (ca 1liter +1-2 buljongt\u00e4rningar) och l\u00e5t st\u00e5 p\u00e5 svag v\u00e4rme. Sm\u00e4lt sm\u00f6r i en rymlig kastrull. Tills\u00e4tt l\u00f6k och ris, fr\u00e4s n\u00e5gra minuter utan att det tar f\u00e4rg. Tills\u00e4tt lite vin och lite buljong. Koka upp och l\u00e5t sm\u00e5koka utan lock. Tills\u00e4tt mer vin och buljong n\u00e4r v\u00e4tskan kokat in i riset och repetera detta steg.<\/p>\n<p>Sk\u00e4r av topparna p\u00e5 sparrisen, ca 5 centimeter och koka i l\u00e4ttsaltat vatten cirka 2 minuter eller tills de \u00e4r al dente. Risotton \u00e4r klar efter ca 20 minuter. R\u00f6r d\u00e5 i en klick sm\u00f6r och parmesan. Risotton ska vara kr\u00e4mig. Toppa med sm\u00f6rfr\u00e4sta sparristoppar till serveringen.<\/p>\n<p>Gl\u00f6m inte att st\u00e4lla in vinet i kylen ca 30 minuter s\u00e5 det kommer ner i temperatur. Ca 18 grader \u00e4r optimalt f\u00f6r att fruktsmaken i vinet skall framtr\u00e4da optimalt.
